The anionic dyes have a sulphonic or carboxylic group in their structure while the cationic dyes have an amino or aminomethyl as the basic group and available as an acid salt. The Azo dyes have 1-3 azo bonds and comprise of the largest group of permitted food dyes. The structure is made up of the primary amine and an aromatic compound and these combinations will usually cover a wide range of colors.
